“I first met Paul in 1994, when I was working for Pierre Gagnaire, in the kitchen, when he still had his three-star restaurant in St Etienne. One morning, Pierre came to see me with a special message: ‘One day I’ll introduce you to a Dutchman who comes from the same place you do.’ What I didn’t know at the time was that he came from ‘the centre of the world’, Axel, a small town in the Netherlands where I often went as a young boy since I had family living on a farm there.
The second time we met was in Hong Kong in 2005, when he was a guest at Amber at The Landmark Mandarin Oriental. I had the pleasure of welcoming n’oncle several times a year, encounters that eventually also evolved into a wonderful business relationship. These days, Paul supplies us with a large selection of the wines on our wine list, particularly the older white and red burgundies. Paul is the master when it comes to these wines. We have become close friends. I have also had the pleasure of meeting ‘Mother’ Adrienne a few times, and daughter Marie-Paul is also part of the Amber wine team these days. The one ‘recipe’ I would really like to have is the secret as to how n’oncle Paul manages to work so fast (gives buzze as he always says)….no one can keep up with him!”
CV – Ferran is a freelance sommelier based in Barcelona, he is the cofounder of www.wineissocial.com and Outlook Wine (The Barcelona Wine School). Ferran has develop his professional career in the sommelier team of elBulli restaurant from 2000 to 2011. He was awarded Best Sommelier in Spain in 2006 (Ruinart).
